In the meantime, we want to wish you a great 2023 with our favorite cookie recipe with cannabis-infused butter (cannabutter), which we hope you’ll share with your friends and family during these holidays!
Why butter?
Infusing your weed in butter is the easiest way of making delicious edibles. THC is lipophilic, meaning it can only bind the fat molecules, of which butter is rich. If you want to make it vegan, you can always choose your favorite plant oil, but since we are talking about cookies, we suggest coconut oil or other neutral-tasting vegetable oil, while we recommend avoiding strong-tasting oil, like olive oil.
Decarboxylation: an important step
First of all your weed needs to be decarboxylated, to properly dissolve in butter (or oil of your choice). This process is necessary because it converts the THCA in the plant into THC, activating the cannabis’ psychoactive potential of your edibles1. The decarboxylation process comes with heat: therefore, when you are smoking, the THCA gets decarboxylated in THC, which then makes you stoned. When making edibles, the decarboxylation process needs to happen before the infusion and can be easily done by heating up cannabis at low temperature in an oven.
First, grind your cannabis roughly in order to break the buds down but do not make it a powder. Then, place your cannabis on an oven tray with a baking sheet and heat it up at 110 °C for 30-40 minutes. Gently mix once or twice during the process to expose all the buds to the heat. Your cannabis is now well decarboxylated!
Now that we understand how important the decarboxylation step is, let’s go to the recipe!
How to make canna-butter step by step
Ingredients
1 cup unsalted butter
1 cup water
1 cup cannabis of your choice (already decarboxylated, around 7-10 grams)
Process
Grind your decarboxylated cannabis: you can use a grinder or your hands, but make sure to avoid having a fine powder, which could stay in the butter and leave a bad plant taste to your edibles.
Melt the butter in a pot on low heat, add the water to help regulate the heat.
Once the butter is melted, add the decarboxylated cannabis to the mixture and keep simmering for 2-3 hours on very low heat, making sure the mixture never comes to a full boil.
strain the mixture with a cheese-cloth to discard the plant material and place it in a jar. We recommend you don’t squeeze it too much to prevent chlorophyll from going into your cannabutter, which can give a bad plant taste.
Refrigerate the jar overnight once it cools down. You will find excess water at the bottom of the jar, you can then remove the solid butter with a knife and drain the water.
Your cannabutter is now ready! We recommend trying half of a teaspoon first and wait around 45-60 min to test how strong it is. Remember, you can always add less weed if the 1:1 ratio feels too much for you, or you can use it in your edible recipe adding normal butter to make your edibles milder. Dosing edibles is always tricky because too many variables have a role, that is why we recommend to first try a small amount and see how that affects you so you can make your own dose!

Christmas cookies recipe
Ingredients
200 g plain flour
½ teaspoon baking powder
2 teaspoon ground cinnamon
100 g cannabutter or (50 + 50 g normal unsalted butter)
75 g brown sugar
1 large egg
1 large egg white
75 g icing sugar
Process
Preheat the oven to 180℃.
Mix the flour with baking powder and cinnamon in a bowl.
Add the butter to the mixture and mix until it resembles breadcrumbs.
Add brown sugar and the egg until it becomes a soft dough.
Wrap the dough with plastic foil and place it in the fridge for at least 30 min.
After the doubt rested in the fridge, roll it out on a lightly floured surface.
Use a biscuit cutter to cut it in your favorite shapes then place it on baking sheet
Bake for 10 minutes in the preheated oven
In the meanwhile, beat the egg white with 75 g of icing sugar
After 10 minutes, take out your biscuits and brush them out with you frost
Cook them for other 5 minutes then let them cool down before serving
Your Christmas cookies are now ready!!
